Hannes Behrmann

Hannes Behrmann was born in 1964 in Schwabach. After time spent in the US, Africa and China, for three years he was chef at the STORCH. He moved on in 1998 to make a name for himself with "Le Cochon Bourgeois". Behrmann loves no-nonsense and earthy, yet traditional cuisine. Before the invention of the fridge, for example, the marinating of "Sauerbraten" was a way of preserving the meat. While today no longer necessary, dropping this technique would mean that an inimitable taste is lost. Schupp and Behrmann come together in their love for "Gastwirtschaft" and weakness for dark "jus". Even if not in vogue, it is this dark sauce which makes this roast into a culinary event.
